In recent years, there has been a growing number of competitions and awards for hot chocolate. Their tasting, judging and evaluation has become a common meeting place for professionals from chocolate production and other highly developed fields such as wine, coffee and cheese.

The primary objective of this presentation is to address the different variables that can influence the evaluation of cup chocolate samples, to demonstrate the impact of these variables on the evaluation process, and to facilitate discussion on the importance of developing specific protocols to adapt the evaluation criteria for these competitions.
